I love gyros. As I was eating a gyro yesterday it made me wonder. What exactly is gyro meat made of? I know it’s a medley of lamb and spices but is there also beef, mutton, pork? What parts of the sheep, cow, and pig is used?

Most gyro/kebab meat is made from chicken (the most unhealthy, fatty chicken you can think off, those that die of heart attack and never see the light of day). Everything but the head, the bones, feet and the organs are blended. Then comes those sold as "beef or mutton", that are chicken with 5-10% of fat and little of meat from those more expensive animals.

Based on what I've seen the people in the kitchen at the local gyro stand working with, it's 2 or 3 parts 80/20 ground beef to 1 part ground lamb, seasoned with shitloads of garlic, onion, cumin, paprika, rosemary and oregano.

Gyro meat is Greek, and Greeks are Greek orthodox /Christians. Pork is consumed in Christianity. If you're muslim, you'll be subbing something else for the pork like all beef, though veal would be milder like pork. You should call it something other than gyro, ideally, like doner kabob. Though the term is from gyro- prefix, note that the term itself is really just for the vertical eletric rotisserie spit, and doesn't have such a synonymous term. Gyro should be pork, beef, lamb, a blend.

Only very poor people eat mutton. Sheep are more valuable for their wool than their meat. It's actually more economical to slaughter lamb earlier. Most people consider mutton too strongly gamey, and inedible. Everyone eats lamb, though.

What sort of third world hole do you live in where the kebab store doesn't tell you what meat they are serving.
Anywhere half decent will usually have minced chicken and beef separately. The decent stores have proper meat, sliced really thin and marinated but that really depends on where you are, minced stuff stands out because it cuts so clean, layered meat ends up rough.
