Im no expert but iirc the main cause is that pork keeps very poorly in hot weather if you don't have modern tech to freeze it. The way they were used in medieval europe is that you'd have a few pigs out in the back and would feed them scraps during the year and then butcher at the start of winter when other sources of food grow scarce, so if you lived in a climate where it gets frosty they were very handy. Here the traditional time for pigslaugtering is November.

Being religious is claiming knowledge, being an atheist is claiming ignorance. You don't win by making an atheist admit "I don't know" because that is his position. However religious claims, if disproved or impossible (like the existence of an all knowing, all powerful and good God in a world where bad things happen), mean that a religious person doesn't really know and is therefore an atheist. Unless he can successfully remain ignorant.
