If it's swimming, yeah. Drain some, until you're left with the right amount for the recipe.
Once you can't ladle out the extra fat, it's no longer extra fat. It's the amount the recipe calls for.

Yeah, some retards act like its gross to use it for anything. I don't want the shit swimming with it, but if you use the right amount it should be fine. My mom used to cook ground beef, then rinse it under tap water to "rinse the extra fat off" then she would cook with it and add butter and shit. Fucking disgusting meat styrofoam.
