I'm thinking of temporarily going vegan to try and force myself to like vegetables.

I was raised in your retarded boomer "meat and potato" household that just ate meat, starches, and drank soda at every meal.

I figure if I avoid meat, dairy, and eggs for maybe 6 months or so I can learn to at the very least not hate eating vegetables.

Veggies go best with meat though. The only reason I started eating veggies as a picky kid was because it came with the meat, then I started to appreciate the veggies too.

Anyway veganism is more of a way of thinking than a diet. You need watch animal gore/snuff, get angwrrry about it then shout at random people on the street, nothing to do with eating vegetables.

Its a stupid idea for numerous reasons.
Hence you cant eat veggies now I assume you have low willpower, thus 100% you'll fail the week you started.
First of all you are most likely completely hooked on sugar and salt. This means every single meal which doesnt have an excess amount in it will taste like shit and you'll not eat it. Cutting out soda is the very first step. Always and forever. Then lowering carb in exchange of fat and protein so you unfuck your tastebuds.
Second: such a huge change will completely exhaust you, especially if you are a big eater, you are gonna need 5 times amount of vegetables to meet calories, which you'll definitely not meet.
Third: veganism is a fad, a shitty one on top of that, especially if you are a male, its dangerous.
Fourth: cheese goes well with most vegetables, also eat more low carb nuts if you are not allergic
Fifth: experiment. Lettuce, cauliflower, spinach, broccoli, cabbage, sprouts are a good start. If you are that much into the sweeter ones try corn and peas.

OP, you most likely will quit in two weeks with this approach. Without knowing what personally works for you a few tips that worked for me:
- try to enjoy every meal
- stop eating overly processed food and soda, it ruins your taste buds
- start to move gradually to a more balanced diet. Replace the desert with fruit, eat a Greek salad or prosciutto and melon for dinner. A Mediterranean style diet is healthier and still easy to switch to for most people.

You probably dislike vegetables because sugar addiction distorts your sense of sweet/bitter. Vegetables generally aren't loaded with glucose (starchy vegetables like potatoes are) so they taste bitter and bland. It's like putting your hand into warm water after having it in hot water; it feels cold. Give up soda and you'll probably notice a difference in how things taste once you get past the cold turkey.
