move it around with spatula
cut up eggs with spatula into smaller pieces as it cooks
eggs become light and fluffy within 2 minutes
turn heat off and put lid to steam them for 30-60 more seconds

add whatever you like to them once done

I basically always pair scrambled eggs with something crispy and the soft texture of the former generally works better for that. If I'm cooking for picky eaters or serving it as a side, I'll beat in pan.

The best eggs are cooked in bacon drippings in a cast iron skillet over a hot fire. There is something about the crisp edges with the soft middle with that slight smoke flavor thats just perfect.
