How does he not know that if you want to use hard cheese in a grilled cheese you have to finely grate them and then combine them with something extremely melty like mozzarella or brie?

Also the key to a good grilled cheese is medium to low heat and thin bread slices not thick slices and open flame crazy high heat. Then there's the issue of the kimchi, there should be nothing chewy in a grilled cheese, the textures are crunch and goo, no chewy crap. At most if you want to be fancy you can add some finely chopped fresh herbs, chives or basil are truly beautiful. Putting onions or apple inside is already too much and ruins the grilled cheese experience, fucking pickled cabbage is way over the line.
