We're omnivores so we don't find low calorie plants to be the most appealing all the time because we won't thrive on that. Just eating high calorie food ends up not being good either though, tastes best to have a mix of both.

Because for all of human history until the last century or so, food was scarce enough that starvation as a bigger threat than obesity. Your body evolved to encourage you to eat high calorie foods so you would have a reserve of fat to keep you alive in times of famine.
