The thing is, a lot of traditions are no longer necessary. The whole thing about aging dough? The reason people did this with sourdough rather than chucking their yeasted dough in the fridge was because there weren't any fridges around for centuries and industrial yeast wasn't either. But guess what, both of these things exist now so it's pointless to cling to a tradition when better ways exist now. Which is also why steam locomotives are only used as museum pieces and curiosities. The technology has been replaced by something more useful.
That's also why Christians for the most part eat pork even though the Bible says we're not allowed to: Because the reason pork was considered unclean is because it spoils quickly and carries parasites but these days we've mostly gotten rid of the parasites and developed advanced counter measures to food spoiling, i.e. refrigeration.
