I'm looking to keep more Asian spices in my kitchen, for chicken, pork and curries.

Which ones should I keep regularly stocked?

Sichuan peppercorns are probably the most important one outside of what you'd normally keep in the kitchen.

That's just cassia bark. The one on the bottom right looks like a dried bat, though.

Wtf is going on in this thread.. real answer:
- white pepper
- five spice
- star anise
- togarashi
- gochugaru
- dried red chilies
- Sichuan peppercorns
- sesame seeds

Sauces
- regular soy sauce
- dark soy sauce
- fish sauce
- sesame oil
- gochujang
- hondashi (not a sauce but having it around is useful)
- mirin

Keep this stuff along w green onions and you can fix a ton of different stuff depending on the produce you buy

Fantastic pantry list

I would add chianking vinegar, sesame oil, dried galangal or sand ginger, shaoxing wine, turmeric powder, and dried chilis

>>14508018
Oh yeah good call
- Shaoxing wine
- black vinegar (fucking seriously good in dumpling sauce)
- oyster sauce
- laoganma (although I am personally kinda sick of the flavor after overdoing it, it can save any bullshit you make just like US hot sauce)

Other pantry stuff
- dried shiitakes
- Bonito flakes + kombu seaweed (if you want to make real dashi instead of hondashi)

Regular pantry essentials
- corn starch (tons of Chinese recipes use this)
- sugar (lol if you want, this will take your recipes to restaurant level sometimes though)

you forgot rice vinegar, and sriracha senpai

great list tho. If you pick up lemons and oranges at the grocery store you can make hundreds of recipes with this list. just make sure you are stocked up on essentials like white sugar and brown sugar, garlic, ketchup, tomato paste, ect. and you'll be on your way to making nearly anything.

There's a lot of Asia - and so a lot of Asian spices. Fivespice is handy, but aside from sichuan pepper, you've probably already got everything necessary (cinnamon, clove, fennel, anise). Dried citrus peel, especially orange, is good for bringing a bit of brightness into spicy, earthy curries - and especially good with cinnamon-heavy pork recipes. Lemongrass is a handy thing, as is fresh turmeric, if you don't mind looking like you smoke heavily (or wearing gloves)... sesame seeds, sesame oil, poppy seed, ajwain, nigella... hot peppers, scallion, ginger, nori... there's a lot of stuff man, a lot of stuff.

I stumbled on this stuff a while back and it's top notch
Think it's "Chinese 13 Spice"
I use it like a dry rub to pan fry meats, Amazing on fresh fish or chicken, can then be tossed into a stirfry
Also kebabs; chicken hearts, octopus, mushrooms, whole flounder, fuck I made myself hungry
