I never seem to run out, mind you, the asian store here only sells them in 2lb flats and the wife doesn't eat spicy food. I got dried greens, dried reds, fresh greens, frozen reds, ready to go pickled ginger-pepper-garlic-lime paste, pickled reds, pickled cucumber with reds, and some sweet pepper sauce. You want any? It's starting to take over my fridge a bit.

Looks like a periperi/red bird's eye. Could also just be a thin cayenne or red jalapeno. Asiatics aren't really particular about their peppers.

>> No.14504611

>>14504602
yeah, i should have made it more clear that i wasn't asking about the chilli in the picture, i just meant if there was a particular type of chilli asians use. the poster calling it a mirepoix made me think it was some kind of set culinary tradition.

isn't it a problem that chillis have wildly different spicyness levels?

Probably Prik chee fah / Sky (pointing) chili... maybe Jindas ... too big to be the bird's eye/mouse-shit, which are very similar/closely related to the Chee Fahs, but smaller and hotter.

this seems to be it yeah. that's weird. a coworker brought some chillis that looked exactly like that to work once, said her mom grew them. by far the best chillis i'd ever tried, in terms of flavor and spicyness level, they were just right for me. weird thing is that we're in eastern europe though, and the girl was some bumpkin even by our standards, so i'm not sure how her family got their hands on chillis like that.

You find what works best for you. Bird's eyes work well for really spicy dishes, Jindas, serranos, red jalapenos, or even hungarian wax peppers can work well for a milder, more pepper-forward mix.

>> No.14504657

>>14504644
Mirasols are pretty common and look similar - they're usually a bit milder. The mouse-turds can get uncomfortably hot. They're technically milder than habaneros, but because the flavour's sharper and less sweet they seem nastier.

There's a limited group of cultivars that are commercially grown in Asia regions for use in regional cooking. They're mostly related, and those with different tastes and spices are pretty easy to differentiate. The typical "thai chilli" is actually a couple different nearly identical cultivars that have basically interbred into a homogenous pepper.

If it's SE Asia it's Birds Eye chilli. They retain the same amount of capsaicin as they grow so you use baby small ones for more (concentrated) spice.

I don't need the full story from her, but it definitely involved robbery, defrauding an airline, and flat out pinning my father against a wall and telling him that she's sleeping in his bed... also growing a bunch of chilies and basil in the garden, and thanking my father for not making super-asian looking kids.
