I just don't like cheap pork and I am too lazy to buy good quality pork, the last time I ate pork was ~6-7 years ago at a fairly high end restaurant. A lovely double cut bone-in grilled pork chop.

if it's not gonna be good high end pork though, fuck it i'd rather order chicken or beef.

Agreed. Factory farmed pigs in the US are raised in disgusting conditions and the meat is honestly garbage.
I had a pork chop in a small town in northern Austria from a local pig, during the fall harvest when it had been fattened up on acorns and apples. Life changing. Can't eat the shit stuff anymore.

the fat is where the real gold is. a top tier cut of pork has amazingly savory and rich fat with a surprising amount of depth. euros do pork really well, american breeds are much leaner. some farms do good stuff though but it's expensive.
