They come out of the oil (that hasn't been changed for weeks) brown, greasy, soft and soggy. That's how they're supposed to be, and that makes them perfect for the purpose of the dish. Nobody outside of Quebec had an actual poutine. Everyone else in Canada use crisp, golden fries for their shitty attempt at poutine, and they're fucking retarded for it. They made it their national dish, yet they don't even know how to make it properly.
