Yes a lot of the same spices are used in curries. The variation comes from what combo of spices (and no it's not "oh shit I ran out of x so I'll invent a new curry, not all spices go in everything), and from what else you add to it. For example a saag aloo is spinach and potatoes, and tastes completely different to a kadhi, which is yoghurt and potatoes. Actually a kadhi also uses mustard seeds which aren't common in other curries.

The reason all your curries taste the same is because you're adding the same shit to then. Try making a curry with a cashew paste, try making a curry with just a very small amount of tomato paste so it's mostly dry, try making a curry with coconut milk. Add some variation to get some variation.

If you buy premade simmer sauces or eat in low cost restaurants or buffets I think they do tend to focus on the same flavors, without balance. It is not just that the more expensive things like saffron will be used minimally, but other reasons too.
There was a study that found that most cooks weren't cooks in England additionally, but actually more monied and more educated types. The food is a ruse to serve alcohol at odd hours which makes them profitable and relevant. Your cook never wanted to be in food service nor grew up learning from their family. Indian curries more or less taste the same because there are too many 'essential' spices for any additives to have a radical change in flavour. They can add stuff where you can say "ah this is X curry not Y curry and this one is Z curry", but it's about on the level of telling KFC from popeyes; yeah they're different but they're both fried fucking chicken, they're interchangeable.

This differences from dishes in most other countries, including their curries, because the essential flavours and spices are smaller. A beef stew at its core is just meat and veges in stock, chili is meat and chilis in water. There are ingredients commonly added to those dishes to the point you might not imagine them without it, but they aren't core ingredients, and you can get a massively different stew or chili with a slight ingredient change that maintains the core spirit of the dish.

it's all been said, but yeah, you're kind of a pleb, but yeah curries from the same region are going to be fairly similar, mostly due to certain ingredients being favoured or endemic in/to whatever area of Asia.

That said, a heavily tomato, onion, garlic and chili based curry, started with a burned caramel, and leveled out with a bit of yogurt or cream, with a pinch of garam masala and a hint of nigella or mustard is going to be much heavier and less subtle (not to mention darker) than a coconut or cream based curry with onion, garlic, chili and ginger being used more as spices than vegetables. Garam masala might make an appearance in a similar amount, but it might be pushed in a lighter direction with the addition of sweeter spices like (more) coriander, cinnamon, clove, allspice - maybe given a little fenugreek (which is that maple smell/taste you might catch at Indian/Caribbean joints).

Even similar curries from different regions will be different. They might be thicker, or have raisins or nuts in them, maybe using coconut and lime vs. yogurt. Chances are that if the rice is different in that country/region, so too shall be the general direction of the curries. You'll also see a lot more biryani and pulao in some areas, and a lot more separation of rice and sauce in others.
