Why is it that people would accept someone like Grant Achatz? Do you even call this cooking any more? What the fuck am I even looking at?

"Okay so now we take our gold leaf liquid nitrogen and pour it into our desaturated pumpkin pie and crack the chocolate orb over it."
-proceeds to spew sauce after sauce-
"As you can see here this sauce I poured on is now turning square."
-makes a fucking mess on your table and charges you $365 for the "experience"-

Fucking kill me. Cringe dining thread? Not food thread? I don't know what to call it. Post your fucking weird ass plating or something.

A little bit though no joke. His shit just seems like, I don't know... a step back? Look at pic related. This looks far far more appetizing than whatever molecular mess he's conjured up.

I mean I don't know maybe I favor a more conservative approach to cooking? More practical maybe? I dunno. Just discussing it.

It's called culinary arts for a reason I guess. In my personal opinion, I think this leans too far into the arts. I like my food to look pretty but I need it to taste good and satisfy me. This looks like it would do neither.

Take a look at this beautiful salad. I can see basil, feta cheese, cherry tomatoes, maybe a vinagrette reduction, bombastic red onions, classic greek olives, cored cucumber served with spices like oregano, fennel seeds, and a bit of olive oil. The beauty of this cooking in comparison to the chemical frankenstein of "art" he refers to as "food" seems almost insulting.

I wonder how many rich people would look at this and laugh and turn their noses up at this ridiculous shit. Can't you imagine something like a steakhouse to be far more enjoyable or beautiful French cuisine? At least then I recognize what the fuck I'm eating.

I don't know I can see sophistication, but as far as I can tell, this starts to blur the line from art and cooking itself. It's like a weird bastardization of cooking, even at a professional level.

An aunt and uncle of mine are on a first name basis with Thomas Keller and can get expedited French laundry reservations and are regulars at fine dining establishments, mostly from the west coast through Chicago. a sister and brother in law are following in their footsteps, also French laundry regulars and multiple other 3 star establishments. These are people who are well off but not extravagantly wealthy or wasteful, and research their options heavily before trips and committing. The four of them have nothing but praise for Alinea, never once heard a sour note about it from them and they've been on many occasions.
There's my second hand anecdote, but personally I trust their judgments. I've only been to chez panisse and then taco Maria and few other oc/la area spots
