So I got a packet of beef stew mix at the store and the ingredients. It calls for 2lbs if stew meat trimmed and 4”5 cups of vegetables the mix and 1 1/3 cup of water. The part that concerns me is the water. I am concerned that may be too little water since there’s going to be 2lbs of neat and 5 cups worth of chopped vegetables. I know stews are thick and all but should I just stick to what it calls for, or add more water?

Don't add any extra water. If you're putting it in a slow cooker you will have plenty of time to adjust the consistency later in cooking, and you only need enough water for a bare coverage since you're not going to be agitating the mix. Put the 1/3 of a cup in the bottom of the cooking dish and then pack the rest in tightly, then add enough of the remaining water to cover. You might not even need to put all of it in at first, if slow-cooking.

throw that shit in the trash. it's just salt, msg, and unknown spices. the only thing you need to make beef stew is fucking beef and stock. you will wind up fucking the salt balance if you use some store bought 'stew mix'. adding the appropriate amount of salt and thyme isn't fucking rocket science.
