Dark yolks and firm whites is what you look for in eggs.

Im a fan of fried eggs personally.

I grew up eating brown eggs, the white ones taste funny. Like too much sulfur in them or something.

Someone who raised chickens told me the same thing, said that darker (more orange) indicated a more natural diet, including foraging for insects.

It's hard to find real free-range eggs in this area. Foxes, coyotes, etc, are a problem; an enclosure is necessary. "So just use a tractor!" Tractor works until you get a certain number of birds, in which case I guess you need multiple tractors or a fully-enclosed yard, too much work for a sideline business. So the backyard guys with enough birds to sell eggs end up using static coops, and the eggs don't look much different from store-bought. But, still nice to know exactly where your food is coming from.

probably because you bought yours at the store instead of letting the chickens run around the yard and eat a bug or two. We typically had 24 hens on hand at any time when I was growing up.

Haha no. We had free range chickens, turkeys, and ducks. Chicken eggs ranging from green to blue to brown to white. None of them taste different. They don't even taste different store bought. Free range might be healthier but in a blind taste test you would never ever tell the difference. The only real difference you'll notice is when eat eggs from a turkey or duck. Basically you fell for a marketing scam about the color of eggshells

We're just going to have to agree to disagree. I do want to try blue chicken eggs though. I don't care for duck eggs. Never tried goose. Had a quail egg at a sushi bar once. "Delicate" my ass, rather eat my own snot. It's cool that you got to grow up knowing where your food comes from though.

>Color has no impact on taste.
We're not talking about artificial food coloring here. Different color means different composition which means different nutrition and possibly a different flavor.

again this patently false.

every couple of weeks we have this thread.

egg producers in every country (and even in local regions) carefully control the diet of their chickens in order to get the color of eggs that, that local expects. they do this by adding or limiting the amount of beta carotene in the chicken feed. THAT'S IT THAT'S ALL!

In some countries they expect blood red eggs, in other countries everyone things a yellow or orange egg is a sign of icky chemicals and won't eat them so they make egg yolks that are almost white.

here in the US people expect yellow to orange and that's what they get.

I personally have had eggs produced by my brother who fed his chickens feed, let them eat bugs in the yard, and carrot peels (on my request) we got dark orange yolks. then I compared those to store bought eggs. There was almost no discernible difference in taste.

Don't give me the ol' "you have no sense of taste" you don't know me.
