I have some for putting into dishes, and some I use as a condiment.

I have a strong scotch bonnet / mustard one, and garlic chili paste that I use all the time for dishes that I want to spice up and add some flavor.
Then I have franks or cholula for pizza or something. It's called layering flavors ... if you just like vinegar spicy, peppery taste Tabasco is all you need.
