What I remember as chinese food growing up as a young kid in Hong Kong

>fried chicken feet
>pig uterus noodles
>fried rice with pork knuckle gristle
>unidentifed fish balls on a stick
>boiled dog meat

Americans have no idea how bad it really is. No one in china knows what the fuck beef and broccoli is or sweet and sour pork. Chinese food is disgusting. Literally the worst parts to eat of any animal. Makes sense because chinks are the race of humans closest to animals. They make disgusting noises when they eat, slurp everything, men in the streets lift their fucking wife beaters over their sweaty stomachs while laughing and chewing with their mouths full of food. Like what kind of idiot decided 2 sticks is the most practical way to eat grains of fucking rice. Starving Nigerians who eat grass have a better diet than the average chinese.

Go to a 99 Ranch and shop around. Take in the smell. Then buy some stuff from the hot food section. It's basically the same stuff as American Chinese buffets, except made by and for Chinese people. The flavors and textures are just kind of...different, and you probably wont find them appealing. In general I'd describe it as more "pungent", but that doesn't mean they just add more garlic.

Food and even political borders are far more regional in that part of the world so simply calling it 'chinese food' is a misnomer in my mind.

Mostly correct. Obviously it will vary between cooks, restaurants, recipes, etc. but American versions of foreign recipes are mostly quite tasty and improved over the original. Only people with a weird hate-boner for America/Americans will disagree overall.

I only learned what real chinese food was last year after going to a mom and pop owned sichuan restaurant and now its my favorite food. It is so much better than the Americanized stuff (which I do still enjoy). Generally you want to seek out restaurants that are named after the regional cuisine that they specialize in (hunan, Cantonese, sichuan etc..) for a more authentic experience. Learn how to say thank you and stuff as well. They appreciate that.

Its just hipsters, they just pulled asians to do it because its funnier that way, but you see white people do this shit all the time too.

It is hilarious, but they're still not wrong. The old people there said it was delicious, but they said multiple times that its not like what they have in China. So even if its "good" its still not authentic Chinese food, so the point kind of stands. And the old ladies regularly said they hated it too. The only one who seemed consistently happy was the old dude, and he's probably just used to eating whatever garbage he gets.

Biggest difference is the communal/family-style dinning. Many dishes are designed for it. Rice is often served plain because it's meant to be the "neutral filler" everyone at the table can consume. Dishes are strongly flavored to make up for the rice. Vegetables and Protein is cut into teeny weeny bits so they can be easily split. Same reason why meat is stewed until all their flavor is in the liquid.

Even portioned dishes like Fried Rice and Chow Mien is designed to make quick lunch out of dinner leftovers.
