With the fourth fast approaching, maybe you should buy the eggs now, so the suckers will peel (older eggs peel the easiest or so I've been told).

to cook eggs that are easy to peel:

leave eggs out to get room temperature.
boil water.
add eggs
boil 5 min
let sit 5 min
replace hot water with cold and let sit 5 min
I use this method and it works every time and the yolks are done exactly perfect.

cold water in the pot
teaspoon of baking soda, add eggs
let eggs heat up with the water. when the water starts really boiling (rolling boil) turn off the heat but leave the pot on the hot stove

replace water with cold water after it has settled, usually 3 minutes

It is 99% the ice bath, bro. Yes older eggs peel slightly easier. But if you want perfect eggs you need the ice.

I used to doubt this just like you. Im not wasting ice. Ill just run them under tap water. Yea I have been there. And yea, i still do it just for my own 4 eggs.

But when you actually make an ice bath and throw those dozen hot nuggets in you will see. It is the ice.

Old eggs will peel more easily, but how you cook them does matter. Starting the eggs in cold water makes the shell stick more for some reason, but if you boil the water first then drop them in it'll peel cleanly. Used to be 90% of the eggs I boiled would have the shell sticking with starting them in cold water, but boiling the water first and 90% peel cleanly instead.

I will buy that anon. I use cold water as a sure fire way to make sure the egg is cooked exactly.

One note for those using the 'start in cold water' method:

This changes above sea level. AT 5000', you're going to get some under-done eggs if you bring to a boil, cover and remove for 9 minutes as I do for my preferred yolk. You might get a running egg in Denver doing this, don't know. But water boils faster and lower temp.
