They have never fucked up my steak, unlike Longhorn that has overcooked my shit more often than not. I prefer Longhorn sides like the Asparagus and I don't care for the cinnamon butter at Roadhouse, but the steak is the most important part and Roadhouse kills it every time.

"fall off the bone" is easy to achieve, and is not pleasant. the meat should easily pull away from the bone and should be extremely tender, but it should disintegrate into tiny shreds as soon as you try to pick it up and eat it; there should be some texture to it

if you want shredded, completely broken down pork, you're far better off with pork shoulder either as carnitas or done with the same spices as ribs, make a spicy sauce from the meat fat/drippings to serve with it

I waited there while in college until I was able to get into a part-time sysadmin gig.
I'm not sure if it was particular to our place, but the asinine drama of most of the waiters stirred up made me want to stab my forehead with a fork.

The food was pretty good for a generic steakhouse though, better than something like Longhorn.
