I'm-about to buy an Induction Stove Top. All my research tells me they are the best thing to happen to cooking since fire. But they seem too good to be true. The tops are too energy efficient... and get hot too quickly...

are there any hidden downsides to induction stove tops?

I guess if you're retarded and routinely slam pans on your stove then yeah? Induction is great, it seems to heat up faster than gas honestly, but it's probably not a noticeable difference. Definitely easier to clean though, just a nice flat surface as opposed to burnt shit stuck to a million irregular edges. Also no worries about a gas leak killing me in my sleep. I have a gas grill outside for fire when I need it, and I never use a wok, so it suits me fine.

That's not my experience at all. Even shitty third world gas stoves come to temp quick while my brief 3-4 months with an induction stove were frustrating. I was stuck with a coil for like 3 years after that, and I agree those are terrible. I would guess that because induction is newer, they're overall in better condition.

Holding temp doesn't seem particularly useful for a stovetop. All you need is a simmer and otherwise wouldn't you use the oven for longer cooks?

Gas has couple advantages
You can move the pans around more freely, throw them around, no fear of breaking a glass surface.
You can use the gas flame to cook paprikas or flat breads.
Induction may have issues with the buttons being in the surface next to the pans and be vulnerable to liquids faking a press and causing beeps and turning the thing on accidentally.

My experiences with induction have not been good. It's very difficult to get a feel for the temperature. Also, I don't know if this is a case of the stove top being cheap, but I have experienced induction tops when keeping something at a medium temperature, it just keeps turning itself off and on instead of actually keeping a temperature. Because of this, I have been unable to steadily cook something that needs to be at a low boil, because instead of a steady boil it will be at a reasonable boil for 30 seconds, then off for 30 seconds, then boil again.

can't use carbon steel (it'll warp because of the hotspots), cast iron will probably take a while to properly heat up
can't properly regulate (since it's either full on or full off)

regular ceramic electric stove is better overall imo (I like that it retains heat and doesn't need direct contact)

but gas can do everything better

it might not matter at all in your case, depending on what and how you cook
at the end of the day, if you really want to, you can make anything work just fine

I’ve had an induction stove for years and can confirm it’s pretty good. works amazingly well for somethings.

The pros:

I own one and I'm loving it. Only disadvantage so far is that woks are basically not working to an acceptable degree with them even if they are specially made for induction. So if you're big on asian cuisine I'd say go gas but for the basic western stuff induction is superiour.

I bought a two-burner Duxtop induction because my apartment has the awful off-kilter electric coils that never sit flat
it was ~200 and totally worth it. Heats up to temp way faster, and I never use more than two burners anyway.

If I were to buy a proper full-sized, I'd make sure it had adjustable power levels rather than one that turns on and off to maintain temperature.
