>sage and butter (perfect for ravioli)

if you're willing to try a different kind of tomato, there's also red pesto, which is made from sundried tomatoes, and trapanese pesto, with green tomatoes and almonds.

mine is golden rigatoni, but saffron is a little expensive and I'm poor.
that or walnuts and cream. I had it once with chestnut tagliatelle, of all things, and it was delicious. but they don't really sell chestnut pasta, and the flour is also really expensive. also too much cream is bad for you.

my favourite affordable one is spicy tuna (with tomato), which apart from being delicious is really cheap. I treat myself at least once a week.

Pasta e fagioli (also known as pasta fagiol, pasta fazoo, and a thousand other names)

Sautee white/cranberry beans in oil with garlic and hot peppers. Crush half of the beans to make it starchy. Maybe toss with some fresh rosemary in there. Some people add tomatoes too, but I don't and neither should you. Best/traditional pasta is pasta mista/mixed odds and ends. Lacking that, you could just stick with elbow macaroni. Some parts of the South, especially Basilicata and Southern Campania, use fresh pastas like troccoli or lagane.

The best temperature to eat it is lukewarm, when the starches begin to congeal.

The best pasta fagioli was made by my late grandmother, who was born and raised in a hilltown in Southern Campania, near the border with Basilicata. She died of pancreatic 4 years back. I was in Rome at the time, and was so broken that I drank a whole bottle of Galliano and threw a three ring binder into a wall. I miss her dearly.
