Eggs IN
Cook until the yellow slime on top of the white turns , well white . Thats your cue that eggs are done.

The number one thing is to cook them slowly. Only a beginner would use a high heat. Fry them gently for the best consistency. Otherwise you end up with burnt undersides and uncooked tops.

>> No.14271266

>>14271247
This is true but cooking them slowly leaves the eggs with a shitty texture.
They are so much yummier if they have crispy edges.

The BEST egg cooking technique is
>Medium/High Heat
>Spread the egg in the pan to ensure maximum crispiness
>Turn off heat and flip only for a second or two to cook the white on top
Using a plate or a lid on top also works but it's harder to monitor the eggs progress and it leaves some condensation on the egg

OP ignore everyone else except me

>pull eggs some time before you cook so they warm up a little in the room temp
>heat pan with medium heat
>crack eggs into something you can pour them from (coffee mug works fine)
>put 1tbsp butter into pan
>when it's melted and hot, pour in eggs while you are holding the pan up slightly so the eggs pool on to one side
>do this for 15 seconds
>put pan down and wait 10 seconds
>jiggle the pan so the eggs aren't sticking
>set timer for 90 seconds
>salt and pepper as you want
>when the timer is done, flip them
>count to 10 slowly
>plate them
you can flip them again as they'll look prettier but what's really the point of that? It's just another possibility of breaking yolks imo

A tip if you're scrambling: whip them bad boys right up until they hit the pan, and make sure you're moving your fork/spoon/whisk circularly, going in and out of the eggs. You want to kind of scoop as you do it. This way you get air bubbles in the eggs, which helps make them fluffy. You don't need to add milk.
Also, if you add pepper, always add it either as the eggs coagulate or just after, don't wait until after they're done entirely. Oregano is also a good addition.

You're stupid, and would most likely prefer microwaved eggs if you didn't oniw that they were microwaved, because they have a huge tolerance for failure, and almost always come out perfect.
