So, care to explain what's wrong with "cheese product" that isn't purely psychosomatic distress over the perceived evils of words like "pasteurized" and "processed" and "product"?

If I were wanting to have some cheese by itself, or perhaps on some crackers, I certainly would prefer actual cheese to cheese product, however, these "singles" work perfectly well for things like hamburgers, grilled cheese, patty melts, hot breakfast sandwiches, etc. They pretty much exist because they don't get oily or break down like most actual cheese and instead give you the perfect melty consistency.

1. Oily is a word meant to describe something as having the consistency of oil. It doesn't necessarily mean to describe something as having oil in it.
2. American cheese was specifically made to not have that consistency when melted. It's the entire point of it.

And desu it's just not as tasty on its own. It's not creamy like soft cheese and it's not satly and sharp like hard cheese. There are none of the natural enzymes that my fermentation loving body craves.

That one is Prästost (Priestcheese?) from Kvibille but the ones from Arla and Allerum is good as well it's a cured cheese with strong flavor (semisalty with a nutty hint and something I can't really describe) and somehow both a hard and soft creamylike texture, it's awesome but the only place I can think of where it might be found abroad is perhaps at IKEA I mean they have always been a good source for caviar no matter what country one is visiting.

Cheddar when melted, sweats and gets greasy/oily, as in this image. It also becomes more of a stringy/stretchy consistency. It tastes fine, but this is not the desired consistency in most situations. Especially not for a grilled cheese.

"cheese product" is fine. probably 80% of the problem people have with it is that it's "not cheese", and the remainder is just personal preference.

it's "not cheese" in the same way that sparkling wine is "not champagne". the parts are the same. if you eat a block of "cheese product", it breaks down in your stomach to the same shit as if you ate a block of cheese. it's just assembled in a different, more "synthetic" way.
that's not a bad thing. it's not any more or less healthy than regular cheese, but it is a different product.

I actually work at a tier 3 store (mainstream) and we don't have a cheese shop. We're the only one left around here that's not a signature or marketplace store which have those. My deli still does have more of the higher priced stuff, just not to the extent pictured. In the dairy section the highest end we have is kerrygold or Tillamook. It's mostly not IWS PCP though, real goddamn cheese for the most part.
