I rarely order a $5 box outside of double chalupa season, but when I do I always sub out the cinnamon twists for chips and guac, and get a soft taco instead of the hard shell. Usually I get the taco al fresco, but I decided to go vanilla tonight, and instead of the half a handful of cold shredded cheddar they usually throw on top I got it melted. This means it was either made fresh, or had been sitting under a heat lamp for an hour. There was virtually no green in the lettuce so I'm not really sure which is the case. Regardless, a few chips with a little of the gauc and a single packet of fire sauce does wonders for Taco Bell's namesake.

I worked there as a teenager back in the mid 00s and nothing there is fresh outside of the salad components (which are still frozen before reheating). All of the meat and nacho plastic cheese comes frozen and precooked in a bag that is reheated after submerging it in 180 degree water for 10 minutes. The beans are dehydrated shit that is shipped in a paper bag. They are quickly hydrated with the same water, stirred, and then promptly dumped into a metal container that is partially submerged in nearly boiling water.

Even with the qualifier, I really don't like that analogy. Most of the US doesn't have anything you could really call street food, because it's a big country, and is spread out, and aside from being cheap and convenient fast food is almost the polar opposite of street food. There's maybe 3 cities where it's even more convenient not to have a car (I'd say NYC, downtown Chicago, and maybe Boston, because fuck driving in Boston). Everywhere else it's really inconvenient not to have a car, so there's not really a market for anything like street food. There are a few places, such as Portland and Austin, but even with their halfway decent public transportation most people still drive.

It's all frozen shit from a factory that is reheated in plastic bags by dumping them in 180 fahrenheit water for a set amount of time. There is no skill involved outside of the speed in which you can slop shit onto a tortilla/burrito wrap and then fold it. The chips are, at least, raw when they are shipped to a store (but still preformed and frozen) so it takes a few brain cells to remember to pull them out of the fryer and sprinkle some salt onto them.
