Lemme guess this pan came with a "cook book" with it, that has you constantly seasoning the ever loving fuck out of food. Protip: you don't need cast iron pan to season the fuck out of things. The only thing different about your pan vs some others is it has a coiled handle to reduce heat transferring to it.

It's ok, but not great. The newer version comes with a lid, mine did not. It's a tight fit for stirring, so it's better for things like soup or heating up cans of corn nibblets. Not really for making gravy or sauces. I make Beenie Weenies in it a lot when I'm bored.

This very expensive version of cast iron was needed.
Good for them for fixing what an issue it was to get a very very smooth surface in a cast iron. There was clearly a decline in quality in newly mass manufactured cast iron, making a huge demand for preseasoned and better made antique pots and pans to get the better quality.
But, I am not sure why so expensive, unless the forgers are paying themselves 6 figure salaries or something. Maybe they are "artist" professionals. If it's better, I wouldn't know. I don't attempt to use my cast iron for 100% of everything like people claim you can. I use it when I want to run some high heat browning, the grill, but mostly pan frying. There's no sticking when you are cooking with oil. I also clean my pan properly with soapy water and it's never rusted once. I doubt you need to wipe it only, or avoid soap and hot water, or it's crap quality seasoning that isn't actually carbon.

Here is how a top tier Griswold came finished from the factory. It is in fact polished. This is part of the reason why Griswold's are the most coveted vintage cast irons. They tended to be cast from iron with less contamination as well, whereas cheaper pans were made from material that was rejected for impurities when making structural cast goods and was redirected to make pots and pans.

Polished pans work better for more than one reason. They are flatter with a more even wall thickness, and have less friction right out of the gate because it doesn't take months or even years to fill in the gravely texture into a nice smoothe surface.
