I want to try some authentic Pad Krapow. I live in the midwest and so aside from obviously not using holy basil, Thai places around here Americanize the dish it by reducing the spice level, using shit like bell peppers, and adding (I'm guessing) extra sugar to the sauce.

You don't need cornbread mix. My family recipe is made with pretty readily available stuff. I assume what the OP would be missing is cream style corn.
