Accidentally bought 90% lean 10% fat beef and I want to make smashburgers tonight, will 90/10 still be good or is it worth going out and getting 80/20?

It might be okay. Some ground beef crumbles apart when you cook it and won't form a patty, chub beef tends to be like that. You might consider oiling the pan first to make up for the lack of fat.

It'll be alright. Leaner mixtures of ground beef just don't want to stick together as well when you drop your patties in the pan. But if you're careful then you should be okay.
