Toasted oats are a nice topping for punching up salads and vegetable dishes. I mix up oats with mashed chickpeas and make fritters. You can also expand on porridge and try different sweet or savory combinations.

For savoury: haggis.
For sweet: crumble.
If using unprocessed oats: avenotto (basically risotto, but using round oats instead of rice), beef and oats stew (basically like beef-and-barley... only oats) or tabbouloat (basically taboulleh... only oats).

Honourable mentions: oat-based beers, oaty bread and that American... um... sausage? or is it a meatloaf? idk wtf to categorise it as... but it's called 'goetta' (sp?). It's basically pork mince, oats, spices and onion. I think there's also some organ meat to it, but I may be getting it confused with a similar American... thing... called 'scrapple' which is pretty much the same thing only corn-based rather than oat.
