Red lentil dahl
1 heaping cup red lentils, soak em while you get everything ready
1 onion
1lb potatoes

4 cups veggie stock

1 tablespoon tomato
paste

1 tsp curry powder, turmeric, cumin ,paprika

1/2 tsp coriander, cardamom, red pepper flake

3 cloves garlic and a bit of fresh ginger

cut the potato into 1/2-1 inch cubes, dice the onion/garlic/ginger and get a cup or two of rice going.

oil up a nice dutch oven and sautee onion for 5 minutes on med high heat. Drop heat to medium and add potatoes and go another 5 minutes. add garlic, ginger and tomato paste, stir and cook a minute or two. add lentils(drained) and spices, mix thoroughly and add veggie stock. bring it all to a fast simmer for 30 minutes, salt to taste and serve over the rice.

Not vegan myself but vegetable stews are good. It seems most vegan meals are very light compared to meat based dishes so I like to make a hearty stew if I'm eating with a Vegan housemate.

Adding Marmite and onion powder helps bring depth to the meal. Mushrooms are a must too. Pearl Barley is usually my choice when I make the dish rather than beans but I often use lentils too.

Sometimes I forget that I'm supposed to be cooking a vegan meal so I start the pan off with a generous knob of butter. I also add fish sauce to oriental dishes and not tell him too. It makes the meal taste nicer and he doesn't know so I'm doing him a service really

I didn't complain all vegans cheat because I don't believe that to be the case.
What I *do* maintain is that ethical veganism is not a valid philosophy. My housemate accepts that an omnivorous diet is better for him personally so I am literally doing him a favour here.
