I'm not much of a cook. Recently I've been eating egg tacos three or four times per week. Eggs, sour cream, land o lakes white American cheese, pickled jalapeños, hot sauce. Scrambled in a lot of butter, very low and very slow while frying corn tortillas in a decent amount of oil to eat them in.
I also made some vegetable stock recently, and the Thanksgiving gravy I made with it was excellent.

Cajun baked ziti, with sweet trinity tomato sauce with cinnamon, allspice, Sriracha, butter and five spice. Layer parboiled penne rigate with sauce, mozz shred, and parm. Put a lot of cheese on top and bake until top is crispy and brown. Yum yum
