However, with sherry cask whiskies you always run a slight risk of getting one aged in a barrel sterilized with a sulfur candle, which makes it smell and taste like rotten eggs. it's all hype, and very few people have the background needed to make the judgement call in the first place. Van winkle WAS one of the best bourbons back when it was actual stizel-weller stock, but everything since 2014 is just high-end buffalo trace. Most bourbon connesieurs will tell you the optimal profile for a bourbon is between 7-10 years, and that much more than that, all you taste is oak, and all of the interesting spice/fruit/nuttiness dissipates

I've been trying to figure out what factors go into those flavors. So far the most that I can guess is that barley whisky is a better bet than bourbon, chocolate malt is a good bet (dunno about other roasted malts, might be too coffeeish) with a sherry or port barrel, though I'm not sure which of those fortifieds and which of their varieties are more effective.

This is literally all sherry casks in existence in the whisky industry. Casks used for sherry maturation aren't exported, they get new oak casks, fill them with sherry, "season" them for a few months/years, then ship them back to Scotland. There are some whiskies that have used "real" sherry casks, as in the ones used in bodegas, known as the solera cask but these are incredibly rare and incredibly expensive:
