I assume youre talking about a brew kit that uses liquid or dried extract. I wouldn’t mess with the grain bill too much until you make the move to all-grain brewing. If you feel the need to experiment, dry hopping a red ale in the fermenter (in addition to the pellets or whatever are provided in the kit) could work out great for you. Happy brewing!

Beer requires aging at least a little bit to get the alcohol, and then when it is canned the yeast is inhibited and the sensory characteristics won't degrade at all.
