carve your lamb in short bursts and place in fridge inbetween. for sitting down lambs it matters less but for leggy lambs you have to work with harder butter

Oddly enough some people actually PREFER rancid olive oil since that's what they're used to.


as a general rule, if you leave your olive oil sitting out on the counter, it will start to go bad within a couple of months. If stored properly an opened bottle of olive oil CAN last 18-24 months, but it requires a light free environment that stays between 60 and 70f. Also make sure the bottle is sealed tightly after use.
