I prepare my own food now, but when I lived with parents I didn't get along with, that wasn't a possibility most of the time. There also people with roommates and there are issues with sharing kitchen for food prep and food being stolen from fridge.

That said, I have also been in a homeless shelter briefly (never had to sleep on the street, thankfully), when I buy food I buy it from the grocery store because it's cheaper and more nutritious, I buy to eat right away things like bananas, discount hot meals, and I buy to store in case I don't want to leave my room (I was lucky that I got a single room too, due to anxiety and luck of the draw), I brought pitas and cucumbers.

But I have the benefit of a middleclass up bringing I think my mom has OCD and I got it from her, while that makes keeping employment difficult, I have problem getting along with people and being stress all the time makes me sick, OCD in some ways make me better at squirreling away food and preparing ahead. It's the short term day to day stuff I have problem with. Can't deal with a single tree when I'm spending too much time obsessing about the entire fucking forest.

Our brain rewards us when we eat fats and salt, because these things are rare in nature.

Stayed in a homeless shelter once where people blow welfare when they get it at McDonalds, it's how the generational poor grew up. The ones who suffered a recent set back save up to get out and/or buy fruits at the nearby supermarket.

I ate the odd McDonald, but even with junk food I brought things that was a combo of shelf-stable and filling like cookies and individually wrapped cake.

It is so depressing. I used to be a Left Plastic, I didn't want to judge, I remember defending a woman who got pregnant at the shelter and was rather careless about the future, I said, somebody have to produce future citizens, I didn't think back then then if she had successfully given birth (she ended up miscarrying), she's not going to raise a productive citizen, and the baby would probably have been born diseased or defective from alcohol so even adoption won't save it.

I've become more cynical since my stint in the shelter even though many people have been kind to me. I won't say I'm anti-charity, it helped me and it did help many who appreciated it, the majority of shelter users are in and out, but there are long term people who doesn't have any plan to leave at all beyond welfare baby or hook a man, and that's the WOMAN's Shelter, more well funded with more resources then what homeless men gets.

Having some social safety net exist is better than nothing, but where there is resource scarcity I'll just be more careful about where it goes.

Earthquake in Mainland China happened when I was young and got my first steady paycheque, I donated towards it, later I find out a majority of aid was snatched up by corrupted officials, even when a reputable charity accepted my money , the officials probably took it from the poor afterwards. Do-over I would have donated to a local rent bank or veteran charity.

I haven't gone grocery shopping since the end of February, excepting some avocados and rubbing alcohol I brought right after a medical appointment at the beginning of March. I don't want to become a bigger societal burden I am now with my poor immune system, so I'm just staying inside and rationing.

I got dark circles under my eyes within the first week of staying in. I decided to eat twice a day, a big meal in the morning to give me energy, keep drinking tea in between to suppress my appetite, and a big meal at the end of the day so I wouldn't be too hungry to go to bed. I know it takes a while for the full signal to go to the brain, but I was hungry for hours after dinner - I was experiencing iron defiency.

Now I know to eat my iron fortified noodles without anything that has calcium in the morning, wait at least an hour before tea, and to eat calcium things for last meal. Still feeling a bit fuck up, but better.

Usually 12 is fine. Depends on the beans, though. Sort, rinse, and soak. Skip sort if you know they don't have grit or crud in them. You can also pre-boil them to speed it up and then cool them down and let them soak for 4+ hours.

It's a matter of taste and the kind of bean.

Pressure cookers force liquid into the bean and so you can skip the step but a lot of people also just soak for 4 hours instead of a full overnight soak.

Or, again, pre-boil them, bring them to boiling, remove from heat, let sit for just an hour. Then pressure cook. Small red and black beans cope with this just fine.

This x1000. I come from a low income household and although I'm ok via a combination of good parenting, good looks, and being a little stupid, my whole family is made of broken people. Poverty is crushing and learning to cook means navigating a whole lot. For example, my grandma is an autist but makes enough to afford fast food due to being a boomer, while my mom and aunt have scant incomes and need to keep her happy to have a roof over their heads in a HCOL area. So all three of them are fat.

One other thing is pretentiousness. When I do make my own food while visiting, they think it's cute but gross. For example using coconut oil to fry an egg when out of butter, they'll pass because that's not supposed to go together. Having their food sold to them as happy meals means they have zero education on what goes into it and need to buy 50 ingredients for every new dish they make just to burn it.

I had an epiphany about this. I am English and at the beginning of the lockdown we were limited to 2 items per person in Sainsbury's (the supermarket i usually use), to get around this I started going to Iceland as well. For those of you that don't know Iceland is a super market that mostly sells frozen processed food that just requires to be placed in the oven to cook and mostly caters to those less well off. I noticed that all people were buying was frozen oven chips and some form of protein (i.e. frozen sausages, frozen beef burgers, chicken tenders, breaded fish, etc...). All of this food was heavily processes, required no skill to cook and was very cheap. Also, everyone bought soft drinks of some kind, which was a rarity at Sainsbury's. These individuals were also incredibly fat. You can a get a tin of oats that's 30 servings in one container for 4$ and microwave it for 5 minutes. That's an average of 63 cents a meal and 5 minutes of your time if you multitask.

Beans and rice about 47$ total for 2-3 weeks worth take a bit longer to prep, but you'll have leftovers for days, and a big bag of rice will keep for literal years. Which is 2 minutes of microwaving ontop of the 15 minute initial cooking time if you've soaked the beans the night before. That's 77 cents for a meal. Uncooked these can keep for literal years making it one good trip for a while to actually get the stuff.

This. Chicken is fucking great. When I started cooking I just threw on salt and pepper and I still do sometimes. I'd also simmer some apples that were on sale and about to go bad and mash it up to make applesauce and top with cinnamon. Learning a bunch of ways to prepare eggs was also fun. If I was lazy I'd just cook oatmeal (pretty much 17 cents a serving) and throw on some cheap preground cinnamon on that too, or put some of that appleauce ontop.

Once a week I'd soak some lentils beforehand and fry up some of that chicken, onions, tomatoes, garlic, and throw the lentil in for some bomb ass soup. If there was spinach or any other vegetable on sale I'd throw that in too. salt and pepper to taste. Once a blue moon I'd make a beef, carrot, mushroom and potato stew.

I did have to walk a ways for groceries too, but a good backpack was great for that so the plastic from the bags didn't dig into my fingers after a while and it was only once or twice a week. I'd always do it on my day off.

Depending on the amount of olive oil you can add water. I use a lot of olive oil and I generally keep the excess (after the chicken is done) either for making roasted potatoes or to mix in with rice. But adding water is fine too, if you didn't use a lot of oil. General rule of thumb of slow cooking is if you're worried about dryness in a recipe you can always just add some amount of water to account for drying.
