The new interior has warmer colors, but the older interior reflects a simpler time, a pre-9/11 time. Just look at those swivel-chairs you never see anymore. The simple colors and patterns, the lingering 80's vibe to it all.

10s-30s had art deco. 40s had streamline. 50s had googie/space age architectue and midcentury modern (the latter remained till late 70s). late 60s and 70s had the obvious stripes, prevalence of brown/orange, etc. 80s was shown above. 2000s was revival of sci-fi looking stuff from the late 60s with all the blobby stuff etc. now it's the turn revival of midcentury modern (similar to Apple Stores).
these will all look soulful and endearing to people who grew up in their respective eras. but you want the truth? virtually all of it was generic, safe, cookie cutter corporate design. just because it was from your childhood might hold special value to you, but it doesnt to other people.

No. Technically modernist architecture is how things looked when we were growing up, it's how things looked after WW2 in general. I would say what the right wing hates is postmodern architecture. Sort of. They hate bad postmodern is more like it, technically postmodern architecture should have all these elements like deliberate complexity, strong use of color, humor, fragmentation, etc. What's hated here is a sort of "cheap Bauhaus" look for which I've started to just use "IKEA" as an adjective.

not really, but people are far too biased for the stuff they grew up with. zoomers are similarly biased for the stuff that is "hype" right now (in their childhood/adolescence).
in reality, it is a pretty accepted criticism that modernist architecture looks sterile and soulless. it's nothing new, people have said it since the 50s and 60s (which later resulted in postmodernism, vernacular, all sorts of revivalism, etc). it's not just coincidence too; modernist movement actually wanted to eliminate personality from architecture. it was _meant_ to be depersonalized, and in a way stripped of identity.
however, it doesn't mean it was bad. it was aesthetically pleasing, it looked presentable and clean. and it has always been about function first. it never looked ridiculous or tacky, too.

The problem with this defense of utilitarianism is that nobody wants to buy a lot of the utilitarian office buildings because they're so ugly that nobody wants to rent space from them. You'd be running the buildings at a loss because nobody wants to live in it. So what happens is the building is demolished and usually replaced with some other ugly utilitarian design that's slightly more hip and trendy than the previous design (e.g. replacing concrete with glass walls on steel frames 20:00 in the vid).

On the other hand, traditional architecture, or more accurately architecture which learns from the past, tends to stay useful for a long time.

as a 21 year old here is my perspective. the old looking buildings from the 80s and 90s look disgusting, cheap, and outdated to me. The new ones are much more aesthetically pleasing and complement the city around them despite them being less iconically shaped. The interiors in the older style buildings are really unacceptable. the average chuck-e-cheese is more appealing to eat in than these. Fast food is typically seen as low class. Everyone still eats it regardless so these brands are taking a mature step forward and investing in new more modern architecture that doesn't look like midwestern shacks painted in neon colors. People these days want to eat in a space that feels a little more professional than the restaurants of old.
Who cares if they look similar. its not like the older restaurants looked that much different from each other either.
