Quality wise they are pretty much equivalent to La Creuset, meaning they will last you literal decades as long as you don't do something retarded like drop them down the stairs.
My grandma has one that's close to 20 years old and still looks basically new. It's something you buy for a lifetime instead of having to replace a cheap one every couple years when it will inevitably crack and the coating chips off.

My dutch oven is roughly 4qts, and its a good size. I can normally make 3-4 servings. But a bit bigger would be better. If I had a choice I would go for 5-6qts depending on whats available.

I wouldnt recommend buying the biggest just because its on offer though. You will end up not using it.

Honestly, it all depends how good your seasoning is.

If you've got a brand new lodge with a factory season, don't do anything acidic with it until you've used it heavily for a few months.

But if you've got a nice strong built up seasoning on your pan, it should have no issues with acidic ingredients. I wouldn't want to CONTINUOUSLY cook acidic meals in it, over and over, but just occasionally it wont cause any problems long term.

Staub has a much better designed lid.
It fits much better and has both dimples for condensation and an indentation on the top so you can easily put hot coals or ice ontop for different cooking methods.
La Creuset on the other hand is a bit lighter and has a bright smooth interior, which makes cleaning and just all around handling their pots a lot easier.

If you are looking at it purely from a cooking standpoint Staub is absolutely the better choice, those extra couple seconds cleaning aren't going to kill anyone.

The black interior is something people seem pretty mixed on. Supposedly it reflects heat much better than the bright one which is supposed to help with slightly more even heat distribution throughout the entire pot, but that's probably so minor it will be absolutely unnoticeable outside of a lab.

The knob you can just screw on and off freely. It's supposed to be taken off when you stack coal ontop of it, but who actually uses their expensive Dutch Ovens on an actual fire?

The dimples are pretty nice when you are steaming shit since it causes all the liquids to be spread around and drop back down pretty evenly. They are also a really nice QoL feature since having them keeps the lid from spilling condensation liquids all over your stovetop when you take the lid off, that's something I always really fucking hated with my previous Dutchy

I really only ever cook for myself and have both a cheapo 4qts and a La Creuset 5.5qts one.
I use the 5.5qts pot a lot more, it's pretty much the ideal size to cook 2-3 meals for me at once.

Talking about quality reminds me that I bought one of the Le Cruset online years ago. The enamel was cracked all over on the inside of the pot, and there were a few flakes completely missing. I got a full refund from the seller, so it was only a little time lost. I ended up buying a Staub, and it's been going strong ever since.
