I've been baking for days. No idea why. Nothing else to do maybe. Today I decided to make chocolate chip cookies. Turned out breddy gud.

i baked more before the quarantine because i could share with people. i'm not eating a whole batch of cookies or a cake by myself. and i don't see any point in freezing them, i'd rather make something fresh when this shit is over.

Baked beans have to be boiled to remove the toxins present in them, period. The difference in baked beans is that they're a dish that originated in Native American (particularly around the Northeast of the continent, though more precisely around New England) cuisine, made of beans, fatty meat, and sugar. It was then taken by the British colonists, who knew about bean casseroles/stews (present in European cuisine), and then applied certain things (notably onion and mustard as flavorings) and certain techniques (such as soaking them first to shorten cooking time). The sweetening and meat changed from maple syrup and bear meat to brown sugar/molasses and bacon, and that style got popular all around British lands, including Britain itself. Hence, beans on toast.

Due to being one of those dishes where the name of the dish and the method of preparation are both intertwined and yet not at all connected..

It's all over the place. Traditional varieties would be based on beans that are native to New England, such as Navy Beans, but I had kidney beans, which are way more common down south, towards Louisiana and Texas. I used brown sugar. I could've used honey if I wanted to, but brown sugar was what available to me. I used a strip of bacon that I diced, plus three smoked sausages that I'm pretty sure can only be described as "general meat", but I like them and they're dirt cheap. Bit of dijon mustard (normally it'd be dried mustard), bit of ginger, allspice, salt for flavor - all of those would've been perfectly viable additions if you're looking at traditional forms of cooking in 17th to 19th century New England. I added a roughly chopped half of an onion as well, as I had some leftover from making mince and tatties (typical Scots dish, it's basic comfort food for my girlfriend and I like it too). The fact that I, notably, did not add tomatoes pushes this away from British territory (traditionally baked beans in Britain have used tomato as the sauce base) and into American territory.

Researching minutiae about food is fun.

Chocolate chip cookies are a staple for good reason. Here's one little pro tip that has far more impact than you'd think:
Sprinkle a few grains of (ideally) fleur de sel or kosher salt on each cookie ball right there on the tray just before shoving it in the oven.

yes! recently I've been experimenting with bread recipes where I make half the recipe before bed and let it ferment 8 hours, then I add the rest of the dry and bake and proof like normal
