I used to work as a promotional bbq guy for this butcher chain in my country. Basically go around in a food truck and giving out food for free at music festivals/block parties etc to market the company. They hand made these pork wieners that were fucking fantastic but most people wouldn't try them because they looked funny. Like the casings weren't 100 percent uniform with them bulging more in one area more than another and the tips of them being pointy rather than round. I shit you not though, of the few people that had them, they all said it was the best hot dog they've ever had.

Yeah, it takes a few tries to get it right. Keep following the recipes/guides, don't use smoked salmon (crab sticks are a good cheap practice material, as is cucumber and tamagoyaki). Cook the rice exactly as they tell you to and leave it to cool properly before using it. Get some clingfilm for the mat. It'll take a while but you'll get it down.

Pork sausage > beef sausage > any other sausage.

Hot dogs aren't quite the same as other sausages. It's so well-homogenized it's like mini bologna tubes. It's disgusting the more you think about it. If you can't already tell, I find bologna vile.

A pork sausage with an intestine casing is top tier, though.

The private selection all beef hotdog with no nitrates is legit the best dog. Its relatively new, I just started getting it within a year.
