A stick of butter is 8 tablespoons. If a recipe is going to use more than 10 it's going to say, "x sticks plus y tablespoons". That's just for home cooking. In a restaurant the sticks are divided into quarter cups, and one stick is a pound, and for baking everything will just be by weight. There's no situation where anyone is measuring by "tens of tablespoons".
