It's because saturated fat can still be more harmful in certain cases, like if you're obese. An obese person will actually be healthier if they limit their saturated fat intake, but that doesn't mean saturated fat is inherently bad for everyone. But since most people are overweight, it ends up being bad for most. If you aren't overweight, and you're not an alcoholic/heavy smoker, saturated fat doesn't really seem to cause any problems though.

It seems a little more complicated than that. The mice didn't absorb that type of saturated fat very well, so they were shitting out more calories compared to the other mice. Don't know if the same thing happens with humans. But you can still literally eat nothing but unsaturated fat, white sugar, white flour, and anything else and not become obese if you focus on calorie count.

This is the saturated fat they were feeding the mice, too. It has a way higher melting point than oleic acid that was also used in the study, and it's way higher than butter or anything else. So it basically sounds like feeding mice a type of fat that is like wax that is poorly digested made them lose weight. Not really a revelation, and most people aren't eating pure stearic acid either.
