Because most of the tasty spices grow in very hot countries, and hot countries are objectively worse countries. Why this is so, I can't answer, but it might have to do with people being dumber due to not having to be as intelligent to survive (constant warmth, plentiful food year round etc)

Because non-European countries are where most of the world's spices and aromatics originate from. Cinnamon, curry leaves, and cardamom from India. Chili peppers and cilantro from Mexico. Tea, star anise, basil, ginger, lemongrass, and green onions from Asia. There are probably dozens more I haven't listed, but you get the idea. Numerous historical wars have been caused over spice trades.
