been seeing people, mainly indians, some white, buying up trolleys full of fresh milk, not the long life stuff but the regular milk that spoils after a week.

What's the deal? what are they doing? now they put a 2 bottle limit for milk when I used to like to buy 4 for the kids

because the yogurt microbes are in balance, the good ones out-compete the ones that give you explosive diarrhoea and off-favours. they also make the environment more acidic so bad stuff can't really grow.

you don't store yogurt at room temp, they go in the back of the fridge. or they can live outside in winter/if you live somewhere cold. indian families generally have gigantic fridges.

Milk has to be pasteurized, but they're not required to pasteurize yogurt and cheese after its been made. The microbes in yogurt are still alive, you can use store bought yogurt as a starter for your own yogurt or sour cream.
