I mean, it's beans and rice (neither of which are anything that great when they come from Taco Bell) rolled up in a tortilla. Pickled peppers should last a month easy. Sharp cheddar maybe 4-5 days if you wrap it up and keep it cool. if you don't see mold it's fine. Pesto usually has a lot of oil, but I personally wouldn't eat it after a couple days of being opened.
