-pour 4 tbsp course flour, a bit of water, 1tbsp baking powder, a few drops of lemon juice, salt, 2tbsp cinnamon, an egg and 2tbsp sugar into a bowl
-mix well, if the egg isn't incorporated you'll get patches of sugary omelette
-pour onto a decently sized plate
-microwave on 750w, 90 seconds
-pour flour sugar and (optionally) whipped cream on top

you probably don't need that much baking powder. 1 tbsp of baking powder is usually enough for 2-4 cups of flour, and you're only using 1/4 cup. can give it a weird salty taste if you use too much. just 1/2 tsp might be enough, or maybe even 1/4 tsp.

you could also cook it like a pancake in some butter if you want something a little crispy.

Just made this. I added 2tbsp of butter to give it a more rich texture and flavor and didn’t have any issues. For the water, I think I put in about 2tbsp. I might have overdone it with the cooking but my microwave is 900 watts so had to modify for that and I made it in a shallow bowl rather than on a plate so it was probably thicker than in the OP and didn’t seem to cook well on the sides. I should’ve lined the bowl with some kind of buffer to prevent it from sticking, but came out well otherwise. Would recommend for a trapped in the house with a microwave recipe.
