Kansas City was a major trade hub, particularly for cattle, was once the 2nd largest stockyards in the country falling just behind Chicago. The style is probably closest to Memphis styles as that is where one of the major founders came from in the 1800s but it developed with a much greater focus on beef. It is much more sauce heavy than something like Texas which is largely served dry. The sauce itself varies depending on where in the city you are, from something like a thicker and slightly sweeter version of the memphis style to a more peppery tomato/vinegar type. Don't look at 'KC Masterpiece' sauce, association with the city is largely marketing. That garbage is a product of the Clorox Company and is is pretty much liquid candy.

The way Missouri is set up you have two major cities hugging the border on either end (Kansas City and St.Louis, both also spill out into their neighboring states) separated by rural hill and forest country in between. There is also a largely rural flavored capital smack dap between them but it is largely irrelevant, it just houses politicians. Oh and all 3 cities pretty much despise each other but thats a different story.

If you talk about BBQ and Missouri you are pretty much just talking about Kansas City, Missouri. Kansas City, Kansas is a fraction of the size and largely just spillover into Kansas...Kansas City predates the State of Kansas by several years, but the name now confuses people on where it is actually located, the spillover doesn't help. Named after the river, which was named after the Native American tribe. There are BBQ varieties in the middle of nowhere locations in between in the ozarks and in St Louis, but StLouis is more well known for...'toasted ravioli' so I don't know what they are doing.

The best BBQ is made via sous-vide. You rub the cut down with yellow mustard and apply your dry rub. Vacuum seal and put in the water bath for time / temp to get desired results (check out Serious Eats or the guides from Anova to get texture guides).
Refrigerate the meat afterwards. Smoke it at 275F until you get the desired amount of smoke / bark (usually 1.5 hour for ribs, 3 hours for pork butt or brisket.)
Yes, this is intentionally hotter than normal. You are trying to get smoke and bark. The meat is already super tender. If you are making brisket, take it off when it looks like it is time to wrap it.

You have to hit both Lexington style and Eastern style (and talk loudly about how you prefer the opposite of whichever type of establishment you're in). Monk's in Lexington is the exemplar of Lexington-style, but 9/10 places in areas like Winston-Salem, Greensboro and High Point are of in a similar vein. Stamey's, Mr BBQ, etc. Kepley's in High Point is the only Eastern-style place I can think of until you start to get closer to Raleigh.

Texas brisket is the most based on the list, it comes black on the outside with lots of peppercorns, is super tender and overall a good time, but Texans have shit sauces.

Kansas City MO dominates most of MO culture and drips into St. Louis. Most Kansas shit is thick, sweet, and aims to be smoky. Pretty good stuff, if "smoky" gets annoying STL tends to drop that shit.

Memphis has a lot of good dryrub. Carolinas feature mustard-based and vinegar-based sauces.

These little local BBQ places pop up all the time and HANDS DOWN beat the shit out of any other place I've ever eaten at. If you're ever in KC you just gotta look around and you'll find them. I've lived and traveled in all corners of the South. currently in Georgia, the BBQ here is pretty good of course, but I'd say my favorite is Kansas city style overall. I think i'm saying this after getting my fill of pull pork and whole pig over so many years. Georgia has the best brunswick stew though which I will never tire of, nobody else knows how to make this. My friend learn the lingo. You don't want brisket with a bunch of bark, ask for inside cut. You don't want shit part of the ribs ask for center cut.
