No casual steakhouse in the country uses USDA prime, you'd be paying $40-50+ for steaks if they were.

Lmao, you have no idea what wholesale USDA prime costs if you think ANY steakhouse selling sub $30 steaks is using anything but USDA select or choice at best.

WHOLESALE price of USDA ribeyes are over $20 a lbs.

Yet longhorn is charging $22 for their ribeyes.

Unless they have ZERO markup for servers, bar staff, building expenses, etc. There is literally no way in hell they're using USDA prime, and if they WERE using USDA prime, they'd be advertising the fact that they do.

I can't find "USDA prime" anywhere on their website, because shocker, they don't use prime.

Hell, even high end steakhouses that DO have USDA prime, won't always use USDA prime for every steak, fillet for example, it's common to be dry aged USDA choice instead of prime because prime fillets are SO fucking expensive wholesale.

I think it's prime gold, or platinum now for the highest, or that just might be an informal grading system that the suppliers have adopted as a domestic version of a4/a5.

anything that isn't USDA isn't official.

https://www.ams.usda.gov/grades-standards/beef/shields-and-marbling-pictures

American consumers will generally buy USDA choice or USDA select at their local stores.

USDA prime is generally reserved for the commercial industry (restaurants) though can be found at some butchers and grocery stores, generally in limited quantity at a fairly high price (though still a good deal cheaper than what you'd pay at a restaurant)

Snake river farms (one of the largest distributors of domestic wagyu) DOES have a "wagyu gold" grading but this isn't USDA approved or sanctioned, it's just what they call it themselves for marketing reasons.

>The regular American Wagyu beef has a BMS score of between 6 and 8 while the Gold Grade has a BMS score of 9+.

A5 wagyu from japan is BMS 8-12.
