I use a serrated dull steak knife to chop my veggies. I literally never need to sharpen it, and I can't cut myself even if I try

A dull knife needs to be forced to do work.
Forcing a knife is dangerous because when you slip it will hone in on your flesh like a pitbull.
A sharp knife cuts with no effort at all, so you are far less likely to slip in the first place.

Note they are called "stainless" and not "stainfree". All stainless knives will rust if the conditions you store them under are harsh enough. If you want to make them truly stainfree you need to add so much chromium that the edge will be utter shit.

Learned from dad. He has been a meat manager for 20 years and most employees he has managed with scars got them when they got lazy with sharpening knives. The rest usually got them from the bandsaw thing they use to cut steaks.

Sharp knife wounds tend to heal easily. They tend to heal slower, but cleaner.

This is the second reason. A sharp knife mostly just slices, which is a relatively clean wound. A dull knife slices partially, but also partially crushed, and crushing + slicing is not a fun wound combo.

Because a dull knife won't cut as easily, so you are more likely to slip and cut something you don't intend to cut
Also a cut from a dull knife takes longer to heal and will not heal as good
There is are reason for why medical grade scalpels are some of the finest blades in existence, because the cuts heal better and leaves less pronounced scars
Obsidian although fragile produce the finest cutting edges known to man
