I have two All-Clad pans and one Hammer Stahl which is comprable. I like them. Kenji says Tramontina is 90% of the quality for a small fraction of the price. If any Tramontina folks are around I'd be curious to hear your experiences.

>> No.13773550

I like cuisinox and Meyer. As long as you're getting full body triclad, and you like the handles, there shouldn't be anything too significantly different (other than price) between them.
Avoid ones with the disc pads on the bottom tho, those are all junk. True full body triclad is worth the extra $$$.

Yes, the skillets and saucepans for sure. Less so for something like a stockpot

I have an 8" nonstick, a 12" d3, and a 14" d3 (which is fucking massive but i use it constantly). also have a 2qt and 3qt saucepan.

of all of them, the 14" skillet gets the most use

Is lagostina a decent brand? I bought a shitload of vintage lagostina (the fuckers with the plastic handles) saucepans and a skillet for like $5-$7 each at a thrift store. Keeping an eye out for copper and tri-ply shit but they sell fast and I aint buying that shit new.

>> No.13775018

they're generally not amazing

at least their current stuff

Their copper cookware for example, it's just copper cladding on aluminium, so it looks like copper, but isn't actually gonna have any thermal advantage compared to actual copper.

The fry pans aren't, but the 4-quart saucepan is worth it.
I've had mine for almost 20 years, use it about 3x per week, and it still looks brand new.
Thick metal walls, fantastic heat distribution and retention, plus the whole thing can go into an oven.

What happenes if you make a triclad pan but after your done you bond a disk pan base made out of really thick aluminium and a thin sheet of stainless to the base?

Anyone have the Cuisinart version of all-clad stuff? I see generally favorable reviews and a decent looking full set for less than $200 and I'm wondering if it's worth it. I don't need the absolute best of the best, I've gotten by just fine for years with a discount set of disk-botttom stainless but they're starting to show their age and the lids are kinda fucked up because they've got the shitty screw-on knob lids that inevitably fail over time.

that's the thing though, a fully clad pan wouldn't need to have a disked bottom. It's a cost cutting feature for less expensive pans, adding it to full clad pan would just give that pan a reason for uneven heat. Uniformity = consistency

Saucepans don't need cladding, just get a quality skillet, maybe a saute pan, and then get cheaper stuff with a good aesthetic for your sauce pans.
