I buy the cheapest crushed Lidl tomatoes for everyday cooking and quality D.O.P. San Marzano tomatoes for when I want something really nice. Honestly the difference isn't worth the 1,8 euros in price.

Whole peeled. San marzano or glen muir organic. IT makes a big difference what treatment they give the tomatoes, because some just aren't "mushy" enough to be turned into a good sauce.

Also, hand crushing it instead of whizzing in a blender is a good secret to having a "homestyle" sauce.

I eat a fuck ton of canned tomato products. Ever since I got a few cans of super bitter store brand tomato sauce I always spend money on it. Really like the cento tomato puree as I like the texture, fiber that remains, and they smell and taste very fresh at like $2.25. Even with these or san marizano I'll still occasionally get an undented can that smells off or has a rotten tomato in it. Always trust your nose with canned tomatoes.

I found out the other week that when making pizza you're not supposed to cook the tomatoes. Just pass fresh tomatoes through a food mill. Add 1g of salt per 100g of tomatoes, olive oil and fresh basil.

As for tinned tomatoes I prefer passata. I eat a lot of cheap pasta and 200g of passata gives me some vitamin c and b1 for the day.

I think siberanon has a point for people living in climates/areas with few fresh options. You don't have the luxury of being snobby over canned items in some places. But for people living somewhere with access to an affordable, diverse selection of food year round with seasonal fluctuations, it makes sense to just make some things seasonally. I don't have an issue with canned tomatoes, but canned pie filling is an abomination. Some things should be savored during their short seasonal peak and be looked forward to the next year.
